Shrimp is one of those foods that really doesn't fill me up. I learned this lesson and will have to add some bread on the side next time.

Angel Hair with Homemade Meatsauce

Fresh angel hair with my version of homemade tomato sauce. This tasty sauce includes onions, red bell peppers, garlic, red pepper flakes, peeled and crushed red plum tomatoes and the secret ingredient, tomato paste!


Tuna Salad Sandwich

Tuna Salad Sandwich with arugula, vine ripe tomato, salt and pepper.  Also a hint of spicy mustard complements the arugula and gives it extra flavor. Yum!

Fish and Chips

The catfish were on sale so I bought a bunch of fillets and fish fried them. Of course, not the healthiest of meals being that I threw in some fries but I balanced it out with some greens. I didn't have enough peas so I added green beans. Sometimes you have to work with what you have in the pantry.

Also added a delicious tomato, cucumber, arugula salad. I love arugula. I think I'm going to use it more in recipes.

Strawberry Peanut Butter Boat

A recent hit and discovery. Strawberries tend to look like little boats when sliced in half so I figured why not add something to kick up the flavor. One of my daughter's favorite, peanut butter.

I decided to start a new blog to keep track of our meals. It is so difficult and time consuming to come up with what our meals will be for the 7 days of the week and you sometimes forget what you ate a few days ago let alone a few weeks ago. We have our staple meals that we continuously go through every month but every now and then I will find a recipe I want to try and forget if it was a hit or a miss. So instead of keeping it jotted down on paper I decided to put it on a new blog with pictures. I'm not sure how this will go or if I will be able to keep up with it but I also need some kind of hobby and the three things I love, food, photography, and organization will hopefully come together nicely on this blog.

Again, I am not limiting myself to just food. I also want to keep track of domestic housewife/mom duties on here. It may seem impossible to keep up with a blog like this with two under 3 but I am sure as hell going to try not only for my sanity but for those around me as well.
